Greek Pastry Bazaar for Home-made Sweets
(HCS) Saco, ME--Several times each year the St. Fotini Ladies' Guild of St. Demetrios Greek Orthodox Church in Saco, Maine holds a pastry sale. Ever popular in Southern Maine, folks come from many miles to buy these exquisite, hand-made sweets and eat a scrumptious Greek luncheon. Moderately priced, these sweets never last long.
The word is out: shop early or find empty pastry trays. Although these dedicated bakers try to increase the number of pastries that they bake for each bazaar, they simply can't keep up with the demand. For their most recent bazaar, the ladies baked more than 3,000 sweets
Using only the finest and freshest ingredients, St. Fotini Ladies' Guild works tirelessly to prepare their pastries to the most exacting specifications. Many decades ago, the ladies chose the best from among their community's recipes and have been following these traditional directions ever since. Patrons readily recognize the more well-known pastries like baklava and koulourakia. And for the bazaars held near Orthodox Easter, patrons can purchase delectable sweet Paschal breads. But these ladies also prepare difficult-to-find regional sweets, like the "diples" from the southern Peloponnese, paper-thin slices of dough rolled quickly as they fry in hot oil. The diples (pronounced "thee-pless," with the accent on the first syllable) are later dipped in honey and sprinkled lightly with crushed walnut and cinnamon.
In addition to their famous home-made Greek pastries, the guild offers traditional Greek luncheon cuisine to patrons. Diners can select from among an array of tasty vegetarian and meat dishes, such as spanakopita, mousaka, lamb entrees, and much more, purchasing individual pastries for dessert.

Don't despair--the ladies are already baking for their next bazaar. . . and their pastries and Greek casseroles like spanakopita will be featured during the church community's annual summer festival held 8-10 July 2005 on the church grounds at 186 Bradley Street.
